Off the HEEEZY...Nutella Mug Cake, yum yum for your tum tum!

So, I have been seeing people making their nutella mug cakes and so I decided to make my own too. The steps are indeed easy.
I altered some ingredients and measurements because I don’t want it to be super sweet! What you will be needing are:
  • 4 table spoons of all purpose flour
  • 2 table spoons of granulated brown sugar
  • 1 egg
  • 2 table spoons of cadburry chocolate powder (cocoa powder may be used)
  • 3 table spoons of Nutella
  • 3 table spoons of low fat milk
  • 3 table spoons of olive oil
The steps? Easy as 1, 2, and 3!
  1. Mix all the ingredients in a bowl until smooth.
  2. Transfer to a tall mug. Do not fill up the whole mug. You need some space for the mixture to rise.
  3. Microwave on high for 1.5-3 minutes. 
  4. OPTIONAL: Top with whipped cream.
  5. ENJOY

Panda Express Fortunes Cookies speak the truth =)

How funny is this? Every once in a while me and Luis get this craving for Panda express. So we go get some. I have this silly little thing I do where I only open a fortune cookie after I'm done eating.  I never open before or during my meal. Dont ask me why?? So after I got done devouring my chow-mein and orange chicken I open my Fortune cookie and look what it says. So I look to my right and Luis is there and I look to my left and Kaleb is there. It's funny how little things like this fall together, and when you realize it you cherish it as long as you can remember.

Better than your mammas cake!

Found this recipe in Home and Garden magazine, and thought I would try to make it. My family LOVED it. As a matter of fact it was gone in one day =)  I really dont like chocolate cake I like fruit based stuff, but I know my boyfriend and son love it so I made it for them.


German Chocolate Cake
Ingredients:

Cake recipe
1-4 oz package of Baker's German Sweet Baking Chocolate
1/2 cup of water
2 cups of all purpose flour
1 teaspoon of baking soda
1/4 teaspoon of salt
1/2 pound unsalted butter (2 sticks), softened
2 cups of sugar
4 large eggs, separated (You use these at different times, so pay attention! Plus you need more for the frosting)
1 teaspoon of vanilla extract
1 cup buttermilk

Frosting
1 12 oz. can of evaporated milk
1 and 1/2 cups sugar
3/4 cup unsalted butter (1 and 1/2 sticks)
4 large egg yolks, slightly beaten
1 and 1/2 teaspoons vanilla bean, split in half lengthwise and scraped
1-7 oz. package of shredded sweetened coconut (about 2 and 2/3 cups)
1 and 1/2 cups chopped pecans, toasted

Cake instructions:
Preheat the oven to 350 degrees F. Line the bottom of the three 9 inch round cake pans with wax paper.

Heat the chocolate and water in a heavy 1 quart saucepan over very low heat, stirring constantly until the chocolate is melted and the mixture is smooth. Remove from the heat.

Combine the flour, baking soda, and salt in a separate medium bowl.

Beat together the butter and sugar in a large bowl with an electric mixer on medium speed until light and fluffy. Add the egg yolks, one at a time, beating well after each addition. Stir in the chocolate mixture; add vanilla. Add the flour mixture alternately with the buttermilk, beating after each addition until smooth. Beat the egg whites in another bowl with an electric mixer on high speed until stiff peaks form. Gently fold into the batter. Pour the batter into the waxed-paper lined pans trying to make them all even in height.

Bake for 30 minutes or until the cakes spring back when lightly touched in the center. Remove from the oven and immediately run a spatula around the sides of the pans to loosen the cakes. Cool 15 minutes. Remove from the pans and remove the wax paper. Cool completely on wire racks. Spread the frosting between the layers and over the top of the cake.


Frosting instructions
Combine the evaporated milk, sugar, butter, egg yolks, and vanilla in a large saucepan. Cook, stirring frequently, over medium heat about 12 minutes or until thickened and golden brown. Remove from the heat and stir in the coconut and pecans. Cool to room temperature to reach a desired spreading consistency

Sometimes people come into your life and you know right away that they were meant to be there… to serve some sort of purpose, teach you a lesson or help you figure out who you are or who you want to become. You never know who these people may be but you lock eyes with them, you know that very moment that they will affect your life in some sort of profound way. And sometimes things happen to you at the time that may seem horrible, painful and unfair, but in reflection you REALIZE that with out over coming those obstacles you would never realize your potential, Strength, will power or heart.
Everything happens for a reason. Nothing happens by chance
Or by means of luck. Illness, love, lost moments of true greatness and sheer stupidity all occur to test limits of your soul. Without these small tests, life would be like a smoothly paved, straight, flat road to nowhere safe and comfortable but
Dull and utterly pointless.
The people you meet affect your life. The success and downfalls that you experience can create whom you are, and the bad experiences can be learned from. In fact they are probably the most touching and important ones. If someone hurts you, betrays you or breaks your heart, forgive them because they have helped you learn about trust and the
Importance of being cautious to whom you open your heart.
If someone loves you, love them back unconditionally, not only because they love and open your heart and eyes to little things. Make every day count. Appreciate everything that you possibly can, for you may never experience it again. Talk to the people you have never talked to before, and actually listen. Let yourself fall in love, break free and set your sights high. Hold your head up because you have every right to tell yourself you are a great individual and believe in yourself, for if you don't believe in yourself, no one else will believe in you. Create your own life and then go out and live it.

The longer I live, the more I realize the impact of attitude on life.

Attitude, to me is more important than facts. It is more important than the past, than education, than money, than circumstances, than failures, than successes, than what other people think or say or do.

It is more important than appearance, giftedness or skill. It will make or break a company... a church... a home.

The remarkable thing is we have a choice everyday regarding the attitude we will embrace for that day.

We cannot change our past... we cannot change the fact that people will act in a certain way. We cannot change the inevitable.

The only thing we can do is play on the one string we have, and that is our
attitude.
I am convinced that life is 10% what happens to me and 90%
how I react to it.And so it is with you... we are in charge of our attitudes

My Funny Valentine...

The funniest thing happened...  My nephews came over yesterday for me to babysit so my brother and his wife could go on a date. The youngest one came up to me and said "Here aunty Michelle, I made you a Valentine's Day card." I took it and said "Thank you" When I opend it up I found 3 stick looking figures and was like what the hell is this?? It look like to me that it was an authentic Tyler drawing, of Tyler and me. There was a third stick figure That looked like a dog to me?? I say to him "Tyler whos is this??" he says "Its Mathieu and he's crawling" I start to laugh soo hard... If you don't know Mathieu is my newborn son.

How funny is that? I tell you  "KIDS SAY THE DARNDEST THINGS"

Its silly little things like this that make you cherish family at heart <3

Here we go...

.:Day One:.
Okay... I've never blogged before, I always told myself that I would never ever blog. What's that darn saying?? "NEVER SAY NEVER" Now look at me, I started a blog site, go figure. I told myself  "I'll NEVER fall in love" and "I'll NEVER have kids" and what did  I do??? I did both.

So today, is the first blog of the day. Let's see how long I'll last. Considering I have a Toddler and a newborn to take care of all day long. I bet I'll last 2 months. But everyday is very interesting. So will see if I run outta things to blog about. That's all for right now, I have to go tend to my children.
